Sauteed Bay Scallops with Thyme


Prep time : ... 20 minutes ... Cook time : 10 minutes ...Makes 2 to 4 servings
1/4 .................cup olive oil
1 ....................pound bay scallops , rinsed and patted dry
1/2 ................ cup chopped scallions
1 .................... clove garlic , minced
1/2 .................cup dry white wine
1 ....................tablespoon chopped fresh thyme or 1/2 teaspoon dried thyme , crumbled
1/2 ................ teaspoon salt
1/4 ................teaspoon black pepper
1) In a large skillet over moderate heat , heat oil for 2 minutes .
2) Add scallops and saute until they begin to turn opaque ... 1 -1/2 to 2 minutes . Turn and saute 1 -1/2 minutes more . Transfer to a bowl and keep warm .
3) Add scallions and garlic to skillet and saute just until tender ... 1 to 2 minutes . Add wine , thyme , salt and pepper and boil over high heat until liquid is reduced by half .
4) Return scallops to skillet and toss quickly to heat through . Serve immediately .
