GEOFF JANSZ GRILLED FISH WITH MANGO SALSA Preparation: 12 mins Cooking: 10 mins Serves: 4 Ingredients 4 blue eye cod fillets (or similar thick white fish fillets) 2 tablespoons olive oil 3/4 cup Rosella Mango Chutney, plus extra to serve 1 mango, peeled & diced 1 red onion, finely diced 1 Lebanese cucumber, seeded and finely diced 2 long chillies, seeded and finely diced 1/2 cup coriander leaves, roughly chopped 2 limes, juice only 200g baby asian leaf salad Method 1. Brush fish with oil, season with salt and pepper. 2. Combine mango, onion, cucumber, chillies and lime juice in a bowl, toss gently. Season to taste. 3. Heat a char-grill or barbeque on high heat. Place fish presentation side down on plate. 4. Cook the fish for 1 minute, turn and brush with Rosella Mango Chutney, turn and baste often. 5. Fish should take 3-5 minutes each side depending on thickness. 6. Place Asian salad leaves on plate, top with fish then salsa, serve with extra chutney. 7. And extra salsa in a bowl. |

ReplyDeleteSchool start and I saw a lot of my friends . I like my new teacher , she is nice . I am in the fifth grade now and I will miss Sha not being in my room daddy say that is okay because I am the leader and to alway do the right thing because I am their big brother . Mama say we can rell you about what we learn in school and write you anytime we want to mama is so sweet and pretty . Love you aunt jeannie sending you lots of kisses and hugs .

ReplyDeleteSchool started now we have to go to bed early , I am in the fourth grade now and I have a nice teacher he told me mama was cute , I told daddy and he said he know mama is pretty and grin daddy is so funny . ReplyDeleteI am in the thrid grade now I have a man teacher he is nice mama and daddy said they like back to school it is the best one we had and for us not to run the teachers crazy . We had fish for dinner , man and poppa ate so much fish poppa ask mama where was the bread , Mama made hot water bread and poppa was happy , he and daddy will it the bread by itself . Look for some more real soon love you and sending you a lot of kisses and hugs .

Their teachers seem to be a nice bunch , we have more certified teachers this year at their school .
Like Baby , I am fighting for the right for all kids to have a better education, afterall, they are our future .
If my kids write to much too regular , please let me know , they know how to get here and now how to sign their names .

ReplyDeleteI bet your mama and daddy are very proud that you are in grade five. Just think, in four years you will be getting ready for highschool.
You are growing up so fast. It is great if you get a teacher you really like. It makes the school year much better and more fun.
I bet Sha misses you too but you both will do just fine. You are the big brother and I know you look after your sisters and next year you will have to keep an eye on your little brother too,at school.
I would love to know what you are learning.I wonder if it is the same stuff as the kids up here in Canada learn in grade five.Is math your favorite subject? I really enjoy your notes,buddy. And I think your mama is very pretty too.

ReplyDeleteThat fish recipe is pretty tasty, I must say. I love to have frenchfries with my fish, they just go great together. We like to eat outside too. I wonder why people enjoy eating outside. Maybe just because it is different.
So you have a man teacher this year? Grade four could be very interesting. Men teachers seem to like to go on more class trips to cool places. I hope your guy is one of those.
I have seen mama's picture and I thought she was very pretty too. Daddy is lucky to be married to her. I have also seen your picture and I thought you were pretty also.
I wonder what your favorite subject will be this year.I would love to know and I would like to know what else you are learning.

Mama told me you might make the beadbugs I posted on Maxy and contribute the money you make from selling them to Nanook.What a fantastic idea and all the cubs will have fun making them.
I really think you will get along very well with your new teacher and I also think he will be very interested in your work for the polar bears.
King Tut is one of my favorite old Egyptians. I saw all the wonderful things they found in his tomb when they were brought to Canada for an exhibition. I was so fascinated with them I went back two more times.Poppa is right do love old things.I think mummies are cool.I know you will enjoy the Tut series.King Tut was very young when he died and it was quite a mystery for a long time.
Poppa sure does love to eat and he loves mama's bread.Heck, he loves everything she cooks.I think daddy does too.

All your kids liked their new teachers, or at least, got a good first impression. I always thought that was key to how well kids performed in any school year.
I look forward to their letters; the chattier the better. I have to say, however, that I'm glad you don't have ten kids...HA!
