Red Peppers & Cheese Quesadillas


Prep Time : ... 12 minutes ... Cooking time : ...7 minutes ...Makes 4 servings
4.........................8-inch flour tortillas
1 ....................cup (4 ounces) coarsely shedded Monterey Jack cheese or Monterey Jack with peppers
1.....................large sweet redpepper , cored , seeded and cut into 1/4-inch strips
1/4 .................cup cooked fresh or thewed frozen corn kernals
3 ....................scallions with tops , thinly sliced
1/4 .................cup chopped fresh coriander (cilantro)
1/2 .................cup prepared mild or medium-hot salsa
**********(optional garnishes) .. reduced-fat sour cream yogurt chees ********
1) Preheat oven to 425*F . Top each tortilla with cheese , red pepper , corn , scallions , coriander and salsa , dividing evenly . Fold tortillas in half , moisten and press edges closed .
2) Wrap in foil . Place on a baking sheet and bake until cheese melts ... about 7 minutes . Remove from oven , unwrap and top with a little sour cream or yogurt cheese , if desired .
