Halibut & Vegetables baked in Parchment


Prep time : 30 minutes ... cooking Time ... 15 minutes ... Makes 4 servings
1 ................halibut steak (about 1 pound) cut into 4 pieces
1 ................teaspoon salt
1/2 ............teaspoon black pepper
4 ...............teaspoons lemon juice
2 ...............shallots, finely chopped
4 ...............tablespoons unsalted butter or maragine , cut into bits
2 ...............medium-size carrots , peeled and julienned
2 ...............sweet peppers , i red and 1 green , cored , seeded and cut into strips 1/4-inch wide
1) Preheat oven to 500*F . Place each piece of fish paralled to the narrow side of a 12- by 18-inch piece of parchment paper or foil , about 3 inched from the edge . top with equal amounts of remaining ingerdients .
2) Bring parchment over fish , seal edges tightly and place on a baking sheet . Bake until parchment puffs out ...about 15 minutes .
3) Place each packet on a serving plate , cut an X slit on top and open carefully .
