Lobster Salad Roll


Prep Time : ...........20 minutes ..........Makes 4 servings
1/4 ........................cup finely chopped celery
2 ...........................tablespoons lemon juice
1/4 ........................cup mayonnaise
1/4 ........................cup finely chopped parsley
************Pinch of cayenne
1/4 .........................teaspoon salt
1 ............................pound cooked lobster meat cut into 1/2-inch cubes (about 6 lobster tails or four 1 -1/2-pound lobsters)
4 ...........................teaspoons unsalted butter or margarine , softened
4 ...........................soft rolls , split and toasted
4 ...........................romaine leaves , cut to fit rolls
1) In a medium-size bowl , mix celery , lemon juice , mayonnaise , parsley , cayenne and salt . Add lobster and toss to mix .
2) Spread 1 teaspoon butter on each roll bottom , divide lobster salad , equally among them , top with romaine , and cover with the top halves of rolls .
Heart healthy and HMmmmmmm so good .
