Broiled Citrus Salmon

Ingredients
8 Ounces fresh wild Alaskan or Washington salmon
1 teaspoon lemon peel
1 tablespoon lemon juice
1/8 teaspoon black pepper
1 garlic clove , peeled and minced
1 tablespoon green onion , chopped
1 medium orange

Preparation

1) Rinse fish , pat dry with paper towels . Cut fish into two 4-ounce pieces (if necessary) . Set aside .

2) Stir together lemon peel , lemon juice , black pepper and garlic in a small bowl .

3) Preheat Broiler . Place fish on the unheated rack of a broiler pan , lightly coated with cooking spray .

4) Brush fish with half of the lemon juice mixture , Broil 4 to 5 inches away from the heat source for 5 minutes .

5) Carefully turn fish over , brush with remaining lemon juice mixture , and broil for 3 to 7 minutes more or until fish flakes easily with a folf .

6) Wash and chop green onion and sprinkle over fish and serve .Peel and slice orange cross-wise and use to garnish .
