Food for Thought : Pickles

You most often find pickles next to a deli sandwich or a ballpark hot dog; however, don’t necessarily mistake them for just a condiment. Pickles are flavorful, low-calorie vegetables that make a great snack. Pickles start out as a raw cucumbers and are then processed by one of many different ways. Usually pickles are submerged in a brine of vinegar, salt and spices and allowed to ferment. Here are a few tips to help you enjoy pickles as part of an overall healthy diet:

1 .   When making pickles, leave the skin on to make sure you get all their fiber and minerals.
2 .   Cook quick pickles: Heat 1 cup apple cider vinegar, 1 cup water and ¼ cup honey. Pour over sliced cucumbers and let them sit for 15 minutes. Drain and refrigerate for about an hour. These make a healthy option to go with sandwiches or as a snack without a lot of salt. These will keep in the refrigerator for about 5 days.
3 .   Remember that pickles are typically high in sodium, which can complicate medical conditions such as high blood pressure. When buying store-bought pickles, look for those labeled low sodium.

  1. I liked your post HB.
    Cucumbers are wonderful...full of antoxidants and also lignans that help prevent heart disease and cancer. I love them pickled . Homemade is best because we don't put a lot of salt in them. In fact I fancy a cucumber right now...a cool treat on a warm night.

      So glad you liked the post we have cucumbers ,tomatoes and all the vegetables in abundance here , my grands get a bucket of water go pick some tomatoes or cukes , rinse them off and eat them , they have their salt shaker with them . I agree homemade is the best . The weather is not as hot for this time of year and we are having cooler than normal night and it rains almost every day , just a slow rain .

    1. My daughter , when is it that I am not in trouble , that keeps you on your toess and my blood flowing with laughter . My grands helped me put them back because you are working hard helping Anita get things in order while we are gone .

    You really have a knack for this , Harvey brought me a jar of pickles , they are kosher , the crunch is out of this world , that girl sure know her business . Have said she has sliced ones , dills , sweet and sour . Nanette can also make all sorts of sweets , the peach trees are full . Keep up the good work .

      I am beginning to get the hang of this , I do not know how long I will last .

      I back up my big talk if you can catch me . Put the pickles back , after all the hell she raised about the herbs , I had a headache and I do not think I want another one off those , she follows you round and talk . (laughing my butt off )
