Butter Tart Squares and Cherry Squares for the Holidays

Ingredients for Butter Tart Squares

For the base or bottom of your squares you will need the following:
  • 1/2 cup of butter
  • 1 cup of all purpose flour
  • 2 tbsp of white sugar

For the butter tart square filling and top you will need the following:
  • 2 large eggs
  • 1 1/2 cups of brown sugar
  • 1 tsp of vanilla extract
  • 3 tbsp of all purpose flour
  • 1/2 tsp of baking powder
  • 1 cup of pecans or walnuts (I used pecan)

Instructions for Butter Tart Squares

  1. Preheat oven to 350°F.
  2. Cream butter well with the white sugar, then add flour mixing well making sure that everything is creamed together.
  3. Press the mixture into an 8" x 8" baking pan.
  4. Pop this into the oven and bake for fifteen minutes.
  5. While the base is baking you can prepare the topping mix.
  6. Mix the brown sugar well with the eggs until the sugar has melted. Add and mix in the vanilla extract.
  7. Stir in the flour and baking powder mixing well.
  8. Add the nuts mixing again.
  9. Once the base is cooked spread the topping mix evenly over the base and return to the oven for another twenty minutes.
  10. Remove from oven and completely cool before cutting.


These are good all year but are especially nice for the holidays. Sticky, gooey...make their tummies happy. You are Santa's 'Inspired Cuisine 'elf.




 
 
Ingredients for Cherry Squares
Ingredients for the base:
  • 1/2 cup of butter
  • 1/4 cup of brown sugar
  • 1 cup of all purpose flour
Ingredients for the topping
  • 2 large egg whites
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 3/4 cup brown sugar
  • 1/4 tsp baking powder
  • 1/2 cup maraschino cherries cut in halves or quarters

Instructions for Cherry Squares

  • Preheat oven to 325°F.
  • Cream butter well with the brown sugar, then add the flour mixing and creaming together.
  • Press mixture into an 8" x 8" baking pan.
  • Pop into the oven for fifteen minutes.
  • While the base is cooking prepare the topping.
  • Beat egg whites until they are stiff.
  • Slowly add sugar, salt and baking powder beating as you go.
  • Add vanilla and beat again.
  • Fold the cherries into the mixture.
  • Add to the base spreading evenly.
  • Place back into the oven for an additional thirty minutes.
  • Remove from oven and cool completely before cutting

This is a favorite in my family...simple but delish and pretty too
