Broccoli Casserole

Mix pantry staples with broccoli to create a comforting casserole that works for weeknights as well as holiday spreads. If the kids enjoy this recipe, try other veggie-loaded casseroles to sneak nutrients in their meals.
 10 Servings

1        pound broccoli, cut into pieces
1        (10.75 ounce) can cream of mushroom soup
2        large eggs, lightly beaten
1        cup mayonnaise
1-1/2    cups shredded Cheddar
1         stick (1/4 pound) salted butter, cut into pieces
Pepper
1        sleeve Ritz crackers, crushed (1/3 of a 12 ounce box)

Preheat oven to 350°F. Mist a 9-by-13-inch baking dish with cooking spray.

Steam broccoli until crisp-tender, 7 minutes. Transfer to a bowl of ice water.

Mix soup, eggs, mayonnaise, cheese, butter and pepper in a saucepan and cook over medium-low heat, stirring constantly, until melted and combined.

Drain broccoli; spread evenly in baking dish. Pour cheese mixture on top. Sprinkle with crackers. Bake for 30 minutes.

Leftover will last 3/4 weeks in freezer.

  1. My family loves casseroles , any type , broccoli is my favorite , tried lots of recipes, this one is terrific , takes no time at all . My mom said it taste like Olive Garden's .
    I am very glad to see the posting of Maxy sez about diabetes . The last post was much needed . Is there anyway I can get in touch with you ?I need help in how to start a diabetes help group here .

      I come from a very large family ... most of them are great cooks , I said most of them (giggling).
      I was pleased to hear you would like to start a diabetes support group , it's easy as pie .I will give you all the tools you need.
      I see you live in Laramie , Wyoming , a large city .
      I posts Maxy sez 12AM my time which is 10PM your time each Sunday morning midnight , leave your email address on Sunday's post between 10/10:15 PM your time , I will get it and delete your address .
      There are so many places to get help , all you need is a push in the right direction .
      I am a proud member of the Cooking Club of America , thanks to one of my sister-in-laws , she publishes recipes in lots of different magazines / newspapers regularly .

    This looks like an easy one for my junior chefs (the twins) to make. Simple and nourishing. I will add it to my comfort dishes. And it's a good way to get broccoli into teenagers who tend to think green things are toxic.
    The lady above wants to start a diabetes 'help group'...I think that's brilliant. They could share knowledge and support. A website would be very helpful.

    1. Howdy PIC ,
      This is a very easy recipe , it can be ready in no time and easy fix after school .
      You can put left over ham / chicken or sausage in the casserole if you want meat and a different taste.
      It's perfect for the boys and I know Nanny and their daddy will enjoy it . Most kids will eat anything with cheese .
      I am very pleased to know there are some taking interest and want to help others . This is the 3rd time she wrote , last time she wanted to know if we was going to continue with the diabetes posts , I told her yes , she also wanted to know if Dad was going to continue with Food for Thought , he will and he has a new angle .

      I am so sorry to hear you had the flu , drink plenty of liquids and hope everyone is well , eat plenty of soups and broth ... it's a good idea to keep soup on the stove .
      I keep a pot of soup on ... a cup / bowl will keep you full .
      Get well my friend , I am not going anywhere , Gil says he is going to spank my musty Butt Hahahaha .
