Smoke Sausage & Rice

Prep : 30 minutes   ...   Makes 6 servings

1 .............pkg. (16 oz.) Hillshire Farm® Smoked Sausage, cut into chunks
1 ............Tbsp. olive oil
1/2 .........cup chopped green bell pepper
1/2 .........cup chopped onion
1 ............clove garlic, minced (optional)
1 ............cup (14 1/2 oz.) diced tomatoes, drained
2 ............cup water 1 Tbsp. Cajun seasoning
2 ............cup uncooked rice

1 .        Heat olive oil in a large skillet over medium heat. Add sausage; sauté about 4 minutes. Remove and set aside.
2 .        Add onions, green peppers and garlic, and cook until vegetables are tender (about 5 minutes). Add water, tomatoes and sausage to skillet with seasoning; stir. Bring to a boil. Stir in rice; cover.
3.         Reduce heat to medium-low, cover and cook 20 minutes or until most of liquid is absorbed. Remove from heat; stir. Let stand covered for 5 minutes. Fluff with fork.
