Lamb Chops with Mint-Fig Sauce

Six ingredients, plus salt, pepper, and cooking spray, are all you need for this elegant lamb chop dish. Plus, you can make the sauce in the microwave!

4 servings (serving size: 2 chops and about 1 tablespoon sauce)
Serve with mashed sweet potatoes and steamed broccoli spears .

8         (4-ounce) lamb loin chops, trimmed
1/2      teaspoon salt
1/2      teaspoon black pepper
Cooking spray
2        tablespoons fig preserves (such as Braswell's)
2        tablespoons fat-free, less-sodium beef broth
1        tablespoon fresh lemon juice
1/2     teaspoon bottled minced garlic
4        teaspoons chopped fresh mint

Preheat broiler.
Sprinkle lamb with salt and pepper. Place lamb on a broiler pan coated with cooking spray; broil 4 minutes on each side or until desired degree of doneness. Keep warm.
Combine preserves, broth, juice, and garlic in a small microwave-safe bowl. Microwave at HIGH 20 seconds; stir in mint. Serve with lamb.

TIP :
You can also use pork chops .

  1. We love lamb chops and we make a very simple mint sauce. Your mint sauce sounds delicious. I have to try it. Even in winter we grill lamb on the outdoor grill. It really brings out the flavor.
    Left you a note on WAG and I learned something new on Maxy Sez. I learned diabetes is a complex illness that affects every aspect of a person's life and every system of their body. I so respect that you have never let it define you or rule you.

  2. We love lamb chops here also and the figs with the mint sauce is a great taste.
    Diabetes is very complex and if you keep control off your sugar levels / eat right / exercise you will do fine and always remember that you are in control .
    That goes for any illness , you can't stop because you feel better , continue and it will be as common as getting out of bed in the mornings .
    I am more healthy than a lot of people that thinks nothing is wrong with them .
